2 teaspoons Dijon mustard

Salt and freshly ground black pepper

Juice of small half a lemon

2 x 200g (average sized) free-range chicken breasts

3 tablespoons light olive oil

Handful of fresh parsley leaves

Handful of fresh basil leaves

2 tablespoons sour cream

Juice of half a small lemon

Small pinch of tarragon (approx. 4-5 leaves)

1 cup walnuts, roughly chopped

Handful or two watercress leaves

50 g Parmesan cheese, grated

Lemon wedges for serving
