1 pound fresh young spinach (look for small-leaf spinach)

4 ounces fresh mushrooms, wiped clean and thinly sliced

2 hard-cooked eggs, peeled and coarsely chopped

1/2 cup vegetable oil

1/2 teaspoon sesame oil (optional)

1 teaspoon sugar

3 tablespoons lemon juice

1/2 teaspoon Dijon mustard

Salt and pepper to taste

6 slices of bacon, fried crisp and crumbled
