6 large bell peppers, a combination of red, yellow and green, cut into 1-inch wide strips

4 large red onions, cut into the same size pieces as the peppers

-- Kosher salt to taste

2 tablespoons sugar

3 tablespoons red wine vinegar

-- Sprigs of fresh thyme, leaves of marjoram or basil (optional)

4 tablespoons capers
