Ingredients for 4 servings

chicken

beans

rice

arugula

mango

oranges

coriander

spring onion

lentils

lemon juice

olive oil

salt

pepper

Preparation

1.

Chop the chicken in cubes and fry them in a pan

2.

Boil the rice

3.

Rince the beans and lentils in cold water

4.

Chop the spring onions, coriander, mango and oranges

5.

Mix the fruit & vegetables and add squised lemon, olive oil, salt and pepper to taste

6.

When the rice is cooked rince it in cold water

7.

Let the chicken chill for a few minutes

8.

Mix the fruit & vegetables, rice and chicken together

9.

Sprinkle with some extra coriander and serve lukewarm
