Buffalo Thunder Chili

I made this chili when I played in the PA State Chili Cookoffs! If you like it even hotter, use habanero instead of jalapeño or in addition to!

Ingredients for 8 servings

2 lbs bison meat

1 lb ground chuck

1 lb your favorite brats bout brats

2 meduim yellow onions

5 garlic clove minced

5 cups beef stock

6 oz tomato paste

30 oz kidney beans

4 jalapeno peppers cleaned fine diced

1 tbsp onion powder

2 tbsps chili powder

2 tbsps ancho chile powder

1 tsp red pepper flake

1 tsp paprika

pinch of saffron

15 oz can diced tomatoes

6 oz can diced green chilies

1 tbsp mexican oregano

1 tbsp ground cumin

1 tbsp ground cayenne pepper

Preparation

1.

Combine all the meat either by grinding together or mixing then brown the meat in a large skillet and place in a 8 quart stock pot

Add a few tablespoons of olive oil to the skillet and sauté the chopped onion & garlic until soft add to stock pot

Now add the beef stock to the skillet, bring to a simmer and add the saffron and tomato paste. Simmer and mix until it dissolves. Add to stock pot.

Add the diced green chilies, fine diced jalapeño, opinion powder, chili powder, paprika, another tablespoon of minced garlic, diced tomatoes, etc... Everything except the beans and simmer for 90 minutes covered.

5.

Taste and adjust with ground black pepper and the other spices to your liking. Add the rinsed beans and simmer another 15-20 minutes!
