Ingredients

3 cup red lentils

6 cup water

2 x red bell peppers, diced

3 x cloves garlic

5 tbsp olive oil

4 tbsp red wine vinegar

2 tbsp fresh oregano, finely chopped (if you need to use dried oregano, start with 1 tbs and add more to taste)

1 1/2 tsp salt (use more to taste, if you like)

1/4 tsp black pepper
