1 8-pound Musquee de Provence Pumpkin — also called a “Fairytale” pumpkin — or other deep-orange, thick-fleshed eating pumpkin or squash

32 oz. chicken broth

2 tbs. olive oil

1 large onion, diced

2 cloves garlic, minced

2 tsp. grated fresh ginger

1 15 oz. can coconut milk

3 tsp. sweet curry powder

1/4 tsp. red pepper flakes

4 tbs. sugar

Kosher salt to taste
