Ingredients

1 pound sushi-grade salmon, boneless, skinless and pinbones removed (see Note)

1/4 teaspoon cinnamon

Pinch kosher salt

Pinch black pepper

2 tablespoons sugar

1 teaspoon toasted sesame oil

1/4 cup rice bran or canola oil for marinating

Oil for deep frying

1 ounce uncooked thin rice vermicelli or bean thread (vermicelli) noodles

1 tablespoon each of several small diced garnishes including: pickled onion or Japanese scallions, preserved sweet cucumbers, preserved red ginger and preserved sweet and sour (hot) yellow ginger

1 tablespoon chopped Italian parsley

Fresh lemon juice, to taste

2 tablespoons toasted sesame seeds
