The Aioli

1 egg yolk

1/2 teaspoon warm water

1/2 cup olive oil

2 to 3 tablespoons finely minced green garlic

Salt to taste

Lemon juice to taste

The Mussels

1/4 cup olive oil

2 carrots, in 1/4-inch dice

2 celery ribs, in 1/4- inch dice

1/2 cup minced shallots

2 tablespoons minced green garlic

3 tablespoons minced parsley

1 cup dry white wine

2 pounds mussels
