Update: I reduced water slightly and it was delicious.

I didn't add potatoes and it's a little too watery. Should have gone less on the water.

Ingredients for 6 servings

2 Tbs. olive oil

1 lb. boneless beef chuck, cut into chunks

1 large yellow onion, chopped

2 carrots, chopped

2 celery stalks, chopped

2 red-skinned potatoes, scrubbed but unpeeled, cut into chunks

1 can (28 oz.) crushed plum tomatoes, with juices

1/2 lb. green beans, trimmed

2 Tbs. chopped fresh flat-leaf parsley

Salt and freshly ground pepper, to taste
