3 pounds oxtail, cut into 2-inch pieces

1 large onion, chopped

1/2 teaspoon kosher salt + more to taste

1 pound honeycomb tripe (optional; see Note)

1/2 cup annatto seeds soaked in a 1/2 cup hot water

1 cup roasted, unsalted peanuts, finely ground

1/2 cup peanut butter

Half of a 2-pound kabocha squash, seeded and cut into 1-inch pieces (unpeeled)

1 small banana blossom (canned is fine), chopped into 2-inch pieces (see Notes)

Pepper to taste

1 pound baby bok choy, quartered or halved lengthwise and washed well

1/2 pound Asian string beans or green beans, cut into 2-inch pieces

2 Asian eggplants, about 1 pound, sliced about 1/2-inch thick

Bagoong or sauteed Philippine shrimp paste, for serving (see Notes)

Cooked rice, for serving
