1 cup all-purpose flour

Salt and pepper to taste

4 ounces fresh buffalo mozzarella cheese, cut in 1/4-inch slices

The Polenta

1 cup polenta

1 quart chicken stock, brought to a boil

1 tablespoon salt

3 tablespoons pure olive oil

Salsa Verde

Salt as needed

1 cup spinach leaves, stemmed and washed

3 garlic cloves

4 scallions, coarsely chopped

1/2 cup coarsely chopped parsley

1 tablespoon chopped cilantro

2 tablespoons olive oil, or more as needed

The Broccoli

1 bunch broccoli rabe

2 tablespoons butter
