1/2 cup shredded coconut (I prefer unsweetened)

2 tablespoons light brown sugar

2 teaspoons baking powder

2 teaspoons cinnamon

1 1/2 cups milk

2 tablespoons canola oil, plus more for cooking

1 teaspoon vanilla extract

2 eggs
