1 lb mexican-style hominy, drained

2 lbs pork shoulder, trimmed of fat and cut into bite-size pieces

10 medium dried chilies (Ancho or New Mexico Red)

1/2 cup salt

8 large key limes , wedged

Garnishes

1 white onion, finely chopped

2 tablespoons Mexican oregano , dried

1/2 cup chopped fresh cilantro

12 tostadas

1/2 head lettuce , finely shredded
