1 1/2 cups boiling water

1/2 cup mascarpone cheese

1/2 cup freshly grated Parmesan cheese

1 garlic clove, minced

7 cups chicken stock

2 tablespoons extra-virgin olive oil

4 large scallions, minced

3 slices of lean bacon, finely diced

1/2 teaspoon chopped fresh rosemary

2 cups arborio rice

1/2 cup dry white wine

Salt and freshly ground pepper

1 tablespoon unsalted butter

1/2 pound thinly sliced Serrano ham, cut into strips

2 tablespoons chopped flat-leaf parsley
