I made a modified version of this dish after receiving kiwi & grapefruit from my food co-op. I did not dress the salad with oil, but did use the vinegar, as the oil and juice used on the fruit were enough. I also used chicken since that is what I had at home. The flavors were very tangy & I enjoyed it. It also also very easy & quick to make. I would use this recipe again.

Ingredients for 4 servings

4 x kiwis

1 large grapefruit

7 oz fresh crab meat

1 inch ginger root, freshly and thinly grated

1 x lime zest

Juice of 1 lime

2.5-3 tbsp avocado oil

1 tsp coriander, chopped

1 dash piment d’Espelette

1 x pomegranate

Salt and pepper

Fresh mesclun salad (tossed in a vinaigrette made of olive oil and white balsamic vinegar in which I infuse thyme and garlic cloves)
