The rhubarb compote:

3 cups thinly sliced rhubarb (about 1-1 1/4 pounds)

3/4 cup sugar + more if needed

1 to 2 tablespoons lemon juice

The chocolate mousse:

1 1/4 cups heavy cream

7 ounces finely chopped, high-quality chocolate (mix of semi-sweet and bittersweet)

2 tablespoons butter

3 large egg yolks

1/2 cup sugar

2 tablespoons water

To assemble:

3/4 cup heavy cream

1 teaspoon sugar

Cacao nibs, for garnish
