Ingredients for 4 servings

4 ounces grapeseed oil

6 (8-inch) black pumpernickel roll with garlic (South Philly Hoagie style roll)

1 medium onion, peeled and julienned

1."Pork wit" which means " everything and with cheese"

1 (6-ounce) bratwurst, casing removed and ground

1/2 cup granulated sugar

4 ounces bock beer

1 orange, juiced (about 1/2 cup juice)

2 fresh bay leaves

2 cups Gewurztraminer wine, at room temperature

1 (36-ounce) trimmed boneless pork loin

12 ounces limburger cheese, skin removed (approximately 2 ounces each sandwich entree)

2 cups warm spring water

1/2 cup salt

1 teaspoon orange zest

6 ounces sweet mustard (recommended: Hengstenberg Bavarian)

1/2 cup grapeseed oil

1/2 cup black peppercorns

1 teaspoon lemon zest

1 lemon, juiced (about 3 tablespoons)

3 green apples, peeled, cored and julienned

2. "Pork wit-outenzi" which means "no cheese only"

1 (2-pound) bag sauerkraut, drained
