1 cup heavy cream

3/4 cup milk

1/3 cup sugar

1 2-inch piece gingerroot, halved

2 inch piece of vanilla bean, split

4 large egg yolks

-- Large pinch salt

The oatmeal cookies:

6 tablespoons butter, at room temperature

1/2 cup firmly packed brown sugar

2 tablespoons granulated sugar

1 large egg

1/2 teaspoon vanilla extract

1/2 cup all-purpose flour

3/4 teaspoon cinnamon

-- Scant 1/2 teaspoon baking soda

1/8 teaspoon kosher salt

1 cup old-fashioned oats

To assemble:

6 1/2 ounces bittersweet chocolate
