Kale Salad A La Coree

Ingredients for 4 servings

-1 head dino kale, de-stemmed, finely chopped

-1/2 medium red bell pepper, chopped into small cubes

-1 1/2 gala apple (any sweet variety will do) chopped into small cubes (leave skin on)

-Handful of craisins

-1/2 cup of feta

-1/4 cup of roasted, chopped almonds

Dressing (all to taste):

-fresh lime juice

-honey

-olive or hazelnut oil

-salt & peppa

Preparation

1.

Add kale and bell pepper to a bowel

2.

Make the dressing and pour 4/5 of it over the kale/pepper mixture. Adjust to taste and remember the craisins and apple will add sweetness and feta saltiness so don't overdo it. Just don't!

Let the dressing soak into the kale/pepper mixture for about 10-15 minutes. In the meantime prepare the rest of the fixings

After 10-15 minutes add the rest of the ingredients, add more dressing if desired and adjust the seasoning

5.

Serve immediately, then brace yourself for oodles of compliments.
