Love the idea of being able to use leftover turkey meatloaf in this recipe! And I don't use beef stock, so I'd use vegetable stock here instead. . . .

Ingredients for 4 servings

1 pound ziti

Salt and freshly ground black pepper

2 tablespoons extra virgin olive oil (EVOO)

1 small onion, finely chopped

3 cloves garlic, chopped

1 teaspoon red pepper flakes

1 cup beef stock (eyeball it)

1 can chunky-style crushed tomatoes (14 ounces)

1 can crushed tomatoes (28 ounces)

4 1-inch thick slices (or equivalent) of leftover meatloaf

1 cup ricotta cheese

1 cup grated Parmigiano Reggiano, divided

1 ball fresh mozzarella cheese, cut into small cubes, divided
