Ingredients

1/4 cup ground tomatoes

2 tbsp butter

2 cups oyster mushrooms

2 cups shredded fresh spinach

4 eggs

1 cup crumbled feta cheese

Zucchini Tomato salsa , (recipe follows)

2 eggs

1 egg yolk

1/2 cup milk

1/2 cup water

1/4 cup butter , melted

1 cup all-purpose flour

2 tbsp granulated sugar

1/2 tsp salt

1/4 tsp pepper

2 green onions , thinly sliced

1 tbsp vegetable oil , (approx)

1 zucchini

1 tsp olive oil

1/2 sweet red pepper , diced

2 plum tomatoes , seeded and diced

1/3 cup chopped fresh coriander

1/3 cup tomato juice

1 tbsp lime juice

1/4 tsp ground coriander

1/4 tsp ground cumin

dash Worcestershire sauce

dash hot pepper sauce

pinch salt

pinch pepper
