'Twas delicious! And so simple. I would not use as much S/P as they suggest- dial it back by 1/4... so maybe a slightly generous 1/2 t of each. I will try toothpicking the bacon to the tenderloin next time too- especially if I get two pieces in my package-- I think that will help it crisp up. Be sure to include to include the apricots- it adds to the dish and the fennel is transformed, so even if you don't like fennel, give this a try. Everyone in my house gave this two thumbs up.

1 pork tenderloin (about 1 pound)

3/4 teaspoon kosher salt

3/4 teaspoon black pepper

4 sprigs fresh thyme

4 slices bacon

1 tablespoon olive oil

2 small fennel bulbs, cut into eighths

8 dried apricots, cut in half
