8 ounces ripe avocado meat, approximately 2 small to medium avocadoes

2 cups buttermilk, room temperature

1 1/2 teaspoons baking soda

1 pound 5 ounces all-purpose flour

2 cups Instant pancake mix from above

1 pound powdered sugar, sifted

1/4 cup sugar

1 tablespoon kosher salt

2 teaspoons freshly squeezed lemon juice

2 whole eggs, room temperature

1/2 teaspoon lemon extract

4 tablespoons unsalted butter, melted and cooled slightly

3 teaspoons baking powder
