2 quarts tap water, plus more if needed

5 slices ginger

3 green onions

2 1/2 quarts pure spring or distilled water

1/2 cup good quality dried donggu (shiitake mushrooms; see Note), hydrated in 2 cups water

1 rounded teaspoonful dried medlar seed (see Note)

3/4 cup salted, cured bamboo (bian jian), rinsed well (see Note)

Kosher or sea salt to taste, as necessary

Brewed soy sauce, for condiment, if desired
