make two changes. don't use sausage rather chicken. don't use flour tortilas but rather mexican wraps. quick deep fry and serve with a spicy carmelized broth. unbelievably good.

3/4 pound fresh chorizo, or spicy Italian sausage, casings removed

1 medium yellow onion, thinly sliced

8 ounces sharp cheddar cheese, grated

6 x 8-inch flour tortillas

1 tablespoon vegetable oil

2 tablespoons fresh cilantro, chopped

Sour cream, for serving
