1 C sushi rice, rinsed and drained

1 1/4 C water

2 tbsp canola oil

1 tbsp grated fresh ginger

4 cloves garlic, minced

4 scallions, thinly sliced

1 lb boneless, skinless chicken breasts, thinly sliced

1 1/2 bunches broccolini (1 lb), sliced diagonally (or 3 1/2 c broccoli florets)

1 red bell pepper, cored and thinly sliced

2 tsp cornstarch, dissolved in 2/3 c water

1/2 tsp salt

2 tsp toasted sesame oil
