Ingredients for 4 servings

1/2-1 teaspoon chicken stock powder (optional)

2 shallots or onions

1 1/4 lbs chicken pieces , with the bone still in (preferably thigh)

7 ounces fine dried rice vermicelli, soaked in hot water to soften (200g)

2 small waxy potatoes , boiled, peeled and sliced

2 kaffir lime leaves , edges torn

2 hard-boiled eggs , peeled and quartered, seasoned with salt and pepper if desired

1 teaspoon salt

1 teaspoon black peppercorns

sambal oelek (optional)

2 garlic cloves , minced

to serve

4 candlenuts, chopped or macadamia nuts

1 teaspoon coriander seed , lightly toasted

2-3 tablespoons oil (for frying)

1 cup coconut milk (250ml)

seasoning paste

1/2 inch fresh turmeric, minced or 1/4 teaspoon turmeric powder

1 slice ginger , minced

1 lime , quartered (optional)

2 ounces shallots , roughly chopped (60g)
