8 oz (225g) andouille or kielbasa sausage, thickly sliced

1 green bell pepper , seeded and finely chopped

1¾ cups long grain rice

pinch of sugar

1 tsp salt

chopped parsley , to garnish

4 skinless and boneless chicken thighs , cut into bite-sized pieces

½ tsp sweet paprika

1 red bell pepper , seeded and finely chopped

2½ cups chicken or vegetable stock

2 garlic cloves, finely chopped

2 tbsp tomato paste

4 tbsp rendered bacon fat or vegetable oil

freshly ground black pepper

2 bay leaves

1 celery stalk, thinly sliced
