2.0 kg pork belly

2.0 onions, peeled and finely sliced

a handful of rosemary and thyme

200.0 ml dry cider

300.0 ml chicken stock

a big handful of parsley leaves

1.0 tsp finely chopped rosemary

a small handful of mint leaves

1.0 garlic clove, peeled and roughly chopped

2.0 tbsp capers

12.0 anchovy fillets

1.0 tbsp Dijon mustard

1.0 juice lemon

100.0 ml olive oil
