  • 1/2 cup brown rice
  • 1 lb trimmed boneless, skinless chicken breast halves, cut into 1" chunks
  • 1 Tbsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 2 Tbsps olive oil
  • 2 large onions, halved and cut into thick slices
  • 4 cloves garlic, minced
  • 5 cups chicken broth
  • 4 large carrots, cut into thick slices
  • 1 can (15 1/2 ozs) chickpeas, rinsed and drained
  • 1 ripe avocado, halved, pitted, peeled, and cut into chunks
  • 2 tsps grated lime peel
  • 1/4 cup lime juice
