1 teaspoon cinnamon

1 (28 ounce) can diced tomatoes , undrained

chopped fresh cilantro leaves (to garnish)

1 eggplant , peeled and chopped into 1 inch cubes

2 cups canned chickpeas , also known as garbanzo beans, drained

3/4 cup vegetable broth or chicken broth

1 large onion , chopped into 1/2 inch dice

3/4 teaspoon curry powder

1/4 teaspoon crushed red pepper flakes

1 large red bell pepper , seeded and chopped into 1 inch pieces

3/4 teaspoon salt

3 garlic cloves , minced

1 1/2 teaspoons turmeric
