Ingredients

1 tablespoon vegetable oil + oil as needed

1 1/2 pounds andouille sausage, cut in half lengthwise then cut on the bias into 1/2-inch-thick slices

1/2 teaspoon cumin

1 teaspoon oregano leaves, crumbled

2 1/2 tablespoons sweet paprika

1/2 teaspoon hot red pepper flakes

2 bay leaves

5 celery stalks, diced

5 carrots, peeled and diced

3 onions, diced

5 ears of fresh corn

10 cups chicken broth

1/3 cup tomato paste

3 cans (14 1/2 ounces, each) black beans, including their liquid

1 pint cherry tomatoes

1/2 teaspoon salt, or to taste

Garnish

Chopped cilantro

Plain yogurt
