4 1/2 ounces flour

2 ounces carrots , small rough chop

salt and pepper

2 cups heavy cream

SOUP

2 ounces celery , small rough chop

3 ounces onions , small rough chop

1 cup creme fraiche

2 sprigs fresh thyme

2 tablespoons Dijon mustard

1 bay leaf

TABASCO CHIVE CREME FRAICHE

1/4 cup chives , thinly sliced

1/2 lb sharp cheddar cheese , shredded

24 ounces ale , Firestone

3 1/2 ounces butter

1 tablespoon garlic , minced
