7 Ingredients

  • 1 2-inch piece fresh ginger
  • 6 cups water
  • 7 Tbsps white miso (fermented soybean paste)
  • 6 large shiitake mushrooms, stemmed, thinly sliced (about 4 cups)
  • 2 green onions, thinly sliced
  • 1 1/2 tsps fresh ginger juice (see above)
  • 3/4 tsp tamari soy sauce
