Ingredients for 8 servings

8 large bone-in beef short ribs (about 6 pounds)

1 1/2 teaspoons ground cumin

Salt and pepper

3 tablespoons extra-virgin olive oil

3 leeks, white and light green parts only, finely chopped and rinsed

6 cloves garlic, finely chopped

2 tablespoons tomato paste

1 12 ounce bottle stout beer

3 sprigs fresh thyme

1 pound carrots, halved lengthwise and cut crosswise 2 inches thick

1/2 pound green beans, preferably haricots verts
