Ingredients for 8 servings

1 x Lemon, halved

2 x garlic cloves, crushed

6 x sprigs fresh cilantro, plus more for garnish, plus 1 tablespoon coarsely chopped fresh cilantro leaves

1 x jalapeno, quartered

4 x boneless, skinless chicken breast halves (about 1 pound total)

3 tbsp unsweetened coconut milk

6 tbsp plain yogurt

2 tbsp curry powder (from slightly spicy to hot, depending on your taste)

1 tsp sweet curry powder

1 heaping tbsp unsweetened shredded coconut

1/4 cup thinly sliced scallions

1/3 cup diced celery

1 tbsp sliced almonds, lightly toasted

1 small Granny Smith apple, cored and cut into 1/4-inch chunks

1/4 cup chopped cilantro

1/3 cup golden raisins

1/3 cup lightly chopped toasted walnuts

3/4 tsp course salt

freshly ground pepper

8 2 1/2 ounces each whole wheat pitas
