Ingredients for 4 servings

1 (14 ounce) can tomatoes

1 garlic clove , crushed

3 tablespoons red wine

1 tablespoon lemon juice

5 cups water

1/2 teaspoon dried basil

1/2 lb onion , peeled and finely chopped

1/4 teaspoon chili powder

2 ounces bulgur wheat or couscous

1/2 lb red kidney beans , uncooked

2 tablespoons tomato puree

salt and pepper

1 tablespoon olive oil

1/2 lb mixed vegetables, scrubbed and chopped (e.g. celery, pepper, carrot)

1/2 teaspoon ground cumin

2 1/2 cups stock (liquid reserved from cooking the beans)
