Ingredients for 6 servings

2 tbsp Extra Virgin Olive Oil

4 ounces applewood-smoked bacon, diced

6 ounces Pancetta, diced

4 x extra large eggs

4 x extra large egg yolks

1 1/2 cup grated Parmigiano Reggiano

1 1/2 pound orecchiette pasta,, i only used 1 pound

1 x small onion, diced

3 cloves Garlic, Minced

1 tbsp fresh thyme leaves

2 cup freshly shucked peas

3 ounces Pea Shoots

2 tbsp chopped fresh flat leaf parsley

Kosher salt and freshly ground black pepper, to taste
