5 ml olive oil

Half an aubergine

For the side salad

mint leaves to garnish

40 g cous cous

Half a fennel bulb, finely sliced, fluffy ends reserved for garnish

30 g ready-to-eat dried apricots, chopped

pinch of cumin seeds, lightly toasted

1 clove of garlic, finely chopped

vegetable stock

1 orange, skinned and finely sliced

20 g spring onions, chopped
