1/4 cup vegetable oil, plus more for drizzling

1/4 cup all-purpose flour

2 pounds starchy potatoes, peeled

1 cup whole milk

1 (5-ounce) package soft herb cheese (recommended: Boursin)

1/4 cup chopped mixed fresh herbs (recommended: chives, dill, thyme)
