1 clove garlic

1 tablespoon pickled ginger

1 tablespoon soy sauce

1 tablespoon rice wine vinegar

1/2 teaspoon chili oil

1/4 cup extra-virgin olive oil

Salt and freshly ground pepper

2 tablespoons extra-virgin olive oil

1/2 pound (about 16) medium shrimp , cleaned and deveined (tails left on)

1 clove garlic , minced

1/4 cup lime juice (from about 2 or 3 limes)

3 large tomatoes

3 avocados , pitted, peeled, and diced into 1/4-inch pieces

2 tablespoons fresh lemon juice

1 English cucumber , peeled and diced into 1/4-inch pieces
