1 shoulder of lamb approximately 2 5kg

1 heaped teaspoon ground coriander plus extra to serve

1 heaped teaspoon ground cumin plus extra to serve

50 g smen or butter at room temperature

seeds from a pomegranate

freshly ground black pepper

1 teaspoon sea salt

a few sprigs of fresh rosemary leaves picked

250 g Greek yoghurt

a small handful of fresh thyme sprigs leaves picked

4 tablespoons harissa
