Ingredients for 4 servings

2 cups lobster meat, poached in butter, removed from shell and seasoned with salt & pepper

2 cups Yukon gold fingerling potatoes, quartered

4 slices thick cut bacon, chopped

2 tbsp parsley, chopped

1/2 lemon, juiced

salt & pepper

1 shallot, chopped

1 carrot, chopped

2 garlic cloves, peeled

2 tbsp tomato paste or 2 fresh tomatoes, chopped

1/2 cup white wine

4 sprigs thyme

4 sprigs parsley

1 bay leaf

1/2 tsp black peppercorns

1/2 tsp saffron

3 anchovy fillets packed in olive oil, rinsed, patted dry & chopped

6 cups filtered water

2 tbsp olive oil
