These are fantastic cookies! The vanilla bean makes all the difference. I, however, cheated a little and replaced the powdered sugar with brown sugar and they turned out great. Do try these out. I recommend them with my eyes closed.

1/2 cup (1 stick) unsalted butter, at room temperature

1/2 cup vegetable oil, such as canola or sunflower oil

1/2 cup granulated sugar, plus additional for sugaring tops

1/2 cup powdered sugar

1 large egg

2 tsp vanilla extract, or the seeds of 1 vanilla bean

2 cup all-purpose flour

1/2 tsp baking soda

1/4 tsp salt
