1 teaspoon ground saffron dissolved in 1/3 cup hot water

Kosher salt and fresh-ground pepper

2 cups basmati rice

1 globe eggplant or 3 Japanese eggplants

5 tablespoons olive oil

3 egg yolks

4 ounces (1 stick) butter, melted

1 teaspoon cinnamon
