1/2 yellow onion, finely chopped

2 tablespoons canola oil

1 14.5-ounce can unsweetened coconut milk (well shaken)

1/2 pound tender okra, cut into 1-inch pieces

1 1/2 to 2 teaspoons salt

1/3 cup fresh tomato puree (about 1 medium tomato, skinned, seeded)

1 serrano chile, cut lengthwise into 4, seeds included

1 pound medium-size raw shrimp, peeled, deveined

1 teaspoon apple cider vinegar
