1 1/2 cups nonfat milk or plain soymilk

1/2 cup unsweetened applesauce

cooking spray

1 tablespoon baking powder

2 tablespoons butter , melted

1 large egg , beaten

1/2 cup washed raisins or dried cranberries or frozen blueberries or dried apricot (or a little of each)

2 cups uncooked quick-cooking oats

1/2 cup packed brown sugar

2 tablespoons wheat germ (optional) or ground flax seeds (optional)

3-4 tablespoons chopped walnuts or almonds or sunflower seeds
