The Compote:

3 apples, peeled, cored and diced

1/3 cup apple juice

1/2 teaspoon cinnamon

1 tablespoon freshly squeezed lemon juice

3 tablespoons honey

1 tablespoon butter

The Flatbread:

1/4 pound piece of lavash bread (about 2/3 of one sheet), cut into 36-40 triangles with 2-inch sides

1/2 pound Brie, cut into 36-40 1/4-inch-by-1-inch chunks

Kosher salt and freshly ground pepper to taste

2 tablespoons chopped fresh thyme

1/4 cup honey, for garnish
