1/2 cup fresh lime juice

1/2 cup superfine sugar

2 to 3 Tbs. low-fat or whole milk

2 1/2 cups all-purpose flour

1 tsp. baking powder

2/3 cup cornstarch

Canola oil or cooking spray as needed

1 egg white, lightly beaten

4 or 5 kiwifruits, peeled and thinly sliced

3 Tbs. apricot jam or passion fruit syrup
